Chef Ming Tsai returns to the @PBSFood Instagram account this Thursday for a live cook-along featuring his recipe for shrimp okonomiyaki, a savory Japanese cabbage pancake, as well as a “saketini” cocktail. Viewers can follow along with Ming in real time and ask questions starting Thursday, May 7 at 3pm ET. Ming Tsai is chef and owner of Blue Dragon restaurant in the Boston Seaport. He also hosts the WGBH-produced public media cooking show Simply Ming.
Ingredients: Shrimp Okonomiyaki
2 cups all-purpose flour (can be ½ all-purpose and ½ whole wheat if you prefer)
1 teaspoon baking powder
Pinch of salt
4 eggs
1 1/3 cup vegetable stock
6 cups chopped cabbage
2 cups shredded carrots
1 bunch scallions sliced, save 2 tablespoons of the greens for the sauce
1 pound chopped up shrimp (can use sliced turkey if you don’t eat seafood)
Kosher salt and freshly ground black pepper
Grape seed oil or vegetable oil
Nori for garnish
Ingredients: Thick Worcestershire Sauce for Okonomiyaki
1 cup real mayonnaise
2 tablespoons Worcestershire sauce
2 tablespoons scallion greens
Ingredients: Saketini
2 ounces sake
1 ounce vodka
1 English cucumber, 1 slice and some pieces julienned
