In this hands-on cooking class, Chef Thi will de-mystify the centuries old craft of butchering a whole chicken and break it down – literally – part by part. We’ll start with a whole bird and a sharp knife to cut the bird in parts, filet the breast and pound into perfect cutlets to bread and sauté, de-bone and properly store the thighs for future use, de-bone and stuff wings for a delicious appetizer and use the carcass for a hearty bone broth. You’ll leave this class with the confidence and skills to dissect a WHOLE chicken in your home kitchen.
