Two years after the project began, Sam Adams' Boston-based Taproom will be open to the public Jan. 30.
The space, steps from the bronze statue of Samuel Adams next to Faneuil Hall, has been in the planning stages for years, with Boston Beer founder Jim Koch long looking for a space for a taproom inside city borders.
Prior to this month, the brewery had a taproom at its Jamaica Plain brewery in 2017, and last year opened a 9,000-square-foot taproom across the street from its Cincinnati brewery.
In December 2017, the brewer confirmed it had nailed down a space at 60 State Street in the former Hillstone location, and work has progressed as the bunker-like former restaurant was turned into a glass-enclosed space.
Signs up during construction initially pointed to a Summer 2019 opening. But Koch said in May that construction teams ran into delays after finding asbestos during demolition, and that the summer deadline had been optimistic.
Koch had said then he hoped to be open by Thanksgiving, but construction continued through the holidays.
