Roland Calupe of the Milagros Project , Ellie Tiglao of Pamangan and Yana Gilbuena of SALO are teaming up to bring you a Filipino dinner featuring dishes from different provinces in the Philippines.


This will be 5-course plated Kamayan style dinner (eating with hands on banana leaves each course) with an intermezzo.

Burong Isda (Entree)
Fermented rice, local fish*, mustard leaves


Humba (Entree)
Pork ribs braised in pineapple, palm sugar, anise, sweet soy and fermented black beans.


Tsokolate-eh (Beverage)
Dark chocolate drink made with cacao and coconut milk.
