Persian cuisine is deeply steeped in tradition and ancestry. The flavors, textures and colors are tantalizing. Saffron, turmeric, pomegranate, cardamom--how can one resist a crispy rice tahdig with rose petals? In this class we'll make fesenjan (a pomegranate walnut stew), a tahdig rice dish with the crispy bottom, rose petals and barberries, and gondi (Persian "matzoh balls") made with chickpeas and chicken.
