Fermentation Workshop with Curro Polo from Harvard

Kombucha, kimchi, miso, pickles and more!

 

Curro’s first approach to fermentation was when working at two Michelin starred restaurant Mugaritz in San Sebastian, Spain. After that he started a Master's in Gastronomy Sciences at Basque Culinary Center and just finished his Master's at Harvard in kombucha; on to his PhD!


Curro will teach us about the various forms of fermentation (lacto, yeast, koji, and more). We will lunch on multiple dishes, savory and sweet, to understand the delicious applications of fermentation in cooking. We'll taste his latest kombuchas and get hands on with miso making and everyone will have (future) miso to take home!


Participants will take home recipes and miso, and are encouraged to make their own creations!

This class does not require any previous cooking experience. 

Children are welcome as ticketed students. 

Young children under 10 must be supervised.

Guests will be eating and drinking on site as well as taking food home from the class. 

Vegan offerings will be available. 

PAGU is a nut-free establishment.

Metered street parking is available. Street parking is free on Sundays.
