Come learn how to achieve perfect flaky, buttery croissants with chef Evelyn Schichner. In this class we will make traditional croissants as well as an almond and a decadent pain au chocolat. Evelyn will demonstrate proper techniques for rolling, shaping, and baking laminated doughs. Understanding the fundamentals of laminated dough will provide you with the skills and techniques to pursue other advanced pastry endeavors such as kouign amann, danishes, and puff pastry. Instructor: Evelyn Schichner
