In this two session class, students will explore the various mediums with which one can craft edible art: sugar (isomalt), sugar paste, chocolate, and potato starch paper. Instruction regarding how to preserve and display these pieces will also be provided.
The first session will cover topics such as the basic science of isomalt (a natural sugar derived from sugar beets) and why this compound disaccharide is a more durable and glossier option for sugar sculptures than “table” sugar (sucrose). Students will also learn about the various options for coloring edible art, which include edible luster dust, edible markers, edible ink, colored cocoa butter, and edible spray paint.
The second session will meet in BCAE’s kitchen, and students will get to put to test the skills they learned in the first class by creating their own pieces of edible art to take home.
