Glendalough Double Barrel $31.99

(A craft Irish whiskey finished in Spanish Oloroso barrels).

Our Double Barrel Irish Whiskey begins its maturation process in flame charred ex Bourbon American oak. It is finished in Oloroso casks from Montilla , a small town found in the rolling hills of the Spanish countryside.

We choose the bodega, the liquid, the casks and the cooper in this region of Spain to deliver a terroir driven sense of this land , encapsulated in the liquid when we put our whiskey in these slow toasted casks for aging.

These specially selected casks combined with expert liquid finishing, deliver a rich and complex flavour to our Double Barrel Irish Whiskey.

Tatting Notes:The nose Rich with dark fruit, cherry, raisin, fig and Christmas pudding. Floral notes with lemongrass, citrus and a touch of nutmeg.

Sweet and smooth, with butterscotch and peppercorn, dried fruit, maraschino cherries and brown sugar.

Finish :Ginger spices a touch of almond and earthiness.

Glendalough Wild Botanical Irish Gin $ 34.99

To make this extraordinary gin, we forage wild botanicals in the Wicklow mountains all year round. Geraldine Kavanagh, our full time forager, brings the wild, fresh botanicals to the distillery within hours of foraging where small-batch slow-distillation is used to tease out the delicate botanical flavours. Glendalough Wild Botanical Irish Gin serves the taste of 'a year in every bottle' and perfectly captures a place in time, with four seasons of foraging in wild Wicklow encapsulated in each bottle.

Created in homage to the bountiful valley of Glendalough in County Wicklow, the new bottle has been designed to look as though it has been picked straight from the Wicklow forest floor. Full-time Forager Geraldine Kavanagh's care for the land is preserved with a woven pattern sitting at the base of the bottle, representing the handwoven basket with which she forages daily. From here, wild botanicals grow and are beautifully embossed around the bottle. Look closely and you will find reverent nods to Glendalough's ancient past including the monastery archway, seven churches and deer stone. In this way, our bottle is transformed into a secret map, for those who know how to use it.

Tasting Notes:Nose >Fresh notes of juniper, citrus, pine - a forest clearing in spring. Cool and mellow at first, Summer flowers, wild Autumn fruits, warm spice. Finish:Long and sylvan with warm Winter spices.

Beato Bartolomeo Breganze Prosecco $13.99

The Breganze Spumante Prosecco appears pale straw with lasting lively bubbles with intense aromas of stone fruit mingled with acacia blossom on the nose. The palate crisp and clean with green apple and pear, layered with citrus and accompanied with floral of rose, creamy with persistent bubbles, the spumante finishes long with balanced sweetness and concentration with lingering almond and lemon zest. An excellent Prosecco that would be best served as an aperitif, lightly chill.The nose has an alluring scent of acacia, fresh peaches, and ginger spice. The wine carries, with a lively spritz, pure fruit flavors of sweet golden apple and grape with white rose petals taking over on the floral finish." -92pts, 2019 Ultimate Wine Challenge.

Block Nine Caiden's Vineyards Cabernet Sauvignon has tasting notes of oak, chocolate, tobacco, plum, blackberry, cherry, and red fruit. Here are some more details from reviews: A full-bodied wine with notes of ripe plums, black currants, and cassis. Wine Enthusiast gave it 87 points and noted its dramatic spicy richness with aromas of charred oak and flavors of chocolate-coated cherry. Aromas and flavors of candied cherry, licorice, cinnamon, and toasted oak. The winemaker noted aromas of warm plum and blackberry fruit flavors, with flavors of black currant fruit, cassis, and hints of sweet spice. Cabernet Sauvignon wines generally have dark fruit flavors of blackcurrant (cassis), black cherry, and blackberry, with notes of green bell pepper, spice, tobacco, wood, and vanilla. The Block Nine Cabernet Sauvignon exhibits aromas that gush of warm plum and blackberry fruit flavors. This wine is well built up front with flavors of black currant fruit, cassis and hints of sweet spice. It shows good energy as licorice and apple wood accents complete its complex finish. The 2020 growing season was generous is length and consistent temperatures. Flavors were strong at harvest and we think 2020 will prove to be a terrific vintage."

That's for sure. For the base, Mr Black uses Australian wheat vodka. I used to see rum base in the past, though Mr Black's approach of having a cold brew in focus can happen very well with a good distilled wheat vodka. Then of course the most important ingredient joins. The cold-brewed coffee is made from 100% Arabica beans. They work with farmers, cooperatives and importers to source ethically cultivated, sustainable coffees. Water used for cold brewing is purified cold water without any additives. A minimal amount of cane sugar is added to balance the taste as you can imagine. The good news is, the whole process including the roasting of beans and distillation happens on-premises and every bottle is made by hand.
