Salmon is an exceptional fish. It makes healthy meals that cook quickly and taste great. We’ll talk about how to buy fresh salmon and how to prepare them. Lars will start with how to break down the whole salmon into different cuts. Then, we’ll make salmon crudo with fennel and celery, potato crusted seared salmon, baker’s rub salmon served with caramelized fennel and garlic sautéed spinach. We’ll also talk about how to select fresh cuts at the market and proper methods for handling and storage. Instructor: Lars Liebisch
