Nothing goes better together than good ol' beer and pizza! Every Thursday we serve up Sicilian slices from Sillari's Pizza in Malden alongside a limited cask beer release.
Cask ale is a traditional British style of serving beer; beer is drawn out of the keg by hand and served at a slightly different carbonation level and temperature than normal draft beer to bring out new flavors and aromas.
This week, we're pouring:
Beer Name: Shut Up Kelly!
Style: Robust Porter
Cask Addition: Triple sec soaked oak chips
ABV: 6.2%
IBU: 27
Color: Inky blackness so deep it threatens to consume you, tinged with taupe at the edges.
Cheese Pairing: Oma, Chimay, or another washed-rind semisoft cheese.
Food Pairing: Smoked pork chops and a baked potato that's been buttered up real good (sour cream acceptable).
Music Pairing (Jimbo's Choice): "Brewing the Storm" by Black Tusk.
Music Pairing (Jared's Choice): "Harmony" by Clinic.
Best Occasion to Drink: Board game night (also acceptable: Metal Monday).
Brewer's Notes: Porter might be my favorite style of beer to brew because, frankly, it's the easiest. There are a dozen different ways you can screw up a porter and still have it turn out pretty good (it's also a go-to when drinking beer from an unfamiliar brewery, for similar reasons). The downside of such a forgiving beer style is that it's that much harder to make something that's better than Pretty Good. But since we cut our teeth on porter, and have been coming back to the style for over a decade, we've got a few tricks up our sleeve(s). So give it a try! Even if you've been disappointed by dark beers before, you may be surprised.
BONE UP BREWING COMPANY //
A Small Brewery Making Beer For Your Mouth in Scenic Everett, Massachusetts.
Bone Up Brewing is the Boston area's smallest brewery! Husband-and-wife brewing duo Jared and Liz Kiraly crank out fresh new beer every week from their 3-barrel nano brewery and taproom. Inspired by old-school Belgian farmhouse brewing while celebrating American styles, their ales combine the heart and soul from each of these beloved beer cultures. Four year round beers are always available, but the gears of Bone Up are always turning, so you can expect an ever-changing array of one offs, seasonal releases, and experimental batches.
Located in the heart of Everett's budding Fermentation District, the taproom is open Thursday through Sunday and features full pours, flights, and growlers from ten rotating tap lines. In addition to a weekly cask, the taproom hosts games and an ongoing series of food trucks and pop ups. Outside of the occasional tasting, the best place to find Bone Up is right at the source!
