Named for the town of Arborio in Italy’s Piedmont region, Arborio rice is a white, short grain variety that’s gluten free yet imparts a starchier profile than other rice types. Once cooked, Arborio remains firm yet creamy and chewy, making it versatile enough for starters to entrees to dessert. In this hands-on cooking class with Chef Thi, you’ll make Tomato and Basil Arancini, Seasonal Spring Vegetable Risotto, and Rice Pudding with Cherry Compote and Roasted Almonds.
